Pizza pub planned for downtown Mt. Pleasant

A new pizza pie is coming to downtown Mt. Pleasant.

Friends and co-owners Will Baird, Tim Chaffin, and Neal Shepler have spent months perfecting their own brand of pizza. The result of many hours of taste-testing should debut some time before Christmas, says Baird.

It’s called Vin Trofeo’s Pizzeria & Pub and will feature lunch specials, late-night pizza slices, and twenty beers on tap. Delivery service is also planned.

"Everything we do is made from scratch. We slice our own pepperonis, mix the dough, created our own sauce," Baird says.

"It’s a unique flavor that’s taken months to perfect."

The Vin Trofeo’s pizza features four cheeses, mozzarella, provolone, asiago, and parmesan, and a crispy crust. Of the many specialty pizzas planned, Baird points to the Big Meat pizza as a standout, a 16 in. pizza loaded with thick cut pepperonis and thinly sliced pieces of black forest ham.

Calzones, grinders, breadsticks, and other similar items will also be on the menu.

Baird, Chaffin, and Shepler plan to appeal to the downtown lunch crowd, pointing to a number of salads on the menu. They also plan to transition Vin Trofeo’s into a nighttime hangout, offering pizza by the slice to complement their draft beers and mixed drinks. Vin Trofeo’s will operate bar hours and close at 2 a.m.

"We’re not looking to be a big party spot. We want a place where people can hang out and chill," Baird says. "It will be a nice sports bar."

The trio are connected with a comedy agency and plan to draw national comics to downtown Mt. Pleasant. A platform stage will be built in one corner of the room.

Vin Trofeo’s Pizzeria & Pub will be located at 120 S. University St. in downtown Mt. Pleasant.
