Long-time restaurateur, Bob Sawyer, is working hard to get his 1,900 square foot organic breakfast spot, Sawyer’s Gourmet Pancake House, open in the next couple of weeks.
Sawyer’s in the middle of renovating the 608 Saginaw Street building to accommodate his new venture.
Sawyer, who is a Lansing Eastsider, bought the building in November 2007. He says the Saginaw location, and its proximity to the 30,000 people who work in Downtown Lansing, will help him gain a secure market base.
“We might not be the cheapest place in town, but we will be the best place to eat,” he says.
All of the food, ranging from seven different kinds of pancakes to traditional omelets, will be made from healthy, organic food. Sawyer’s Gourmet Pancake House will be smoke free because “it makes no sense to eat organic food if you’re going to inhale smoke while you’re doing it,” Sawyer says.
