Mototr City Casino's fine dining establishment, Iridescence, opened last week with soaring views and a local chef at the helm of its adventurous menu.
Excerpt:Chef Adam Hightower, a Detroit-area native who most recently worked at the AAA Four Diamond restaurant Bali by the Sea in Waikiki, Hawaii, has been named fine dining chef. His menu will focus on local and organic cuisine; specialty entrees include cinnamon lavender pheasant, green peppercorn crusted filet of prime beef and apple wood wrapped Cornish game hen.
Motor City has taken an all-local tack that contrasts with MGM's Vegas stylings. This is intentional, says spokesperson Jennifer Kulczycki. "Our celebrity chef is here everyday preparing the meals," she says. "He's garnishing, saucing, prepping ingredients -- he's actively part of the kitchen, he's on site."
